ABOUT RUDBECKS
In 2013 I – Tilde Rudbeck – started Rudbecks as part of my parents' cheese shop.
In 2017, my sister and I bought the business from our parents.
In 2021, Claus and I bought my sister's part of the business.
BACKGROUND IN ECOLOGY
I was raised on an organic farm from the age of 7–16. From there my passion for animal welfare and ecology grew. We have had restaurants around the country since I was 2 years old, also while we were farming. We are a working family that thrives best when we are at work.
OPEN FOR LUNCH ALL YEAR ROUND
The most important thing in my life is my children. That is why we have also designed Rudbecks to fit a life with children. When I started the café in 2013, I was a single mother and therefore only opened for brunch and lunch. It turned out that such a place had been missing on Fanø, and Rudbecks is now open 7 days a week all year round.
THE FAMILY BEHIND RUDBECKS
At the beginning of 2020, I met the man in my life and luckily he is just as crazy as me. Claus is also self-employed, with the company EA Automatic A/S and loves to work and be busy. Claus looks after EA on weekdays and Rudbecks on weekends.
We both value our family time, and our combined 5 children are part of everyday life in the cafe. We close all days of the week at 4pm, so we always have the evenings with our children.
Only the 5 high season weeks 27–31 are we open in the evening.
FANØ COLLECTIVE
We love Fanø and want to create life and jobs all year round here on the island. That is why it is important for us to be open all year round. Our small shop, which is connected to the café, is full of delicious Fanø specialities.
We support locally as much as possible.
We use local, organic, Danish raw materials.
We support the local business community by e.g. to use local craftsmen, tailors and farm shops.
BUSINESS DEVELOPMENT IN NORDBY
In 2020, I was a co-founder of Nordby Handelsstandsforening, where I have since acted as chairman. I have joined the association to create life on the island all year round, so that we can maintain and create jobs on the island.
